Made with just a hint of fennel to unify the flavours, this unmissable cacciatore is a real family favourite.
There's a great story behind the history of using fennel or "finocchio" in salami, it supposedly goes back to the middle-ages in Tuscany when a thief hid a stolen salami in a patch of fennel. Later, when he went back for the salami, the sweet fragrance of the fennel had infused the salami and a legend was born. Our recipe is more Southern-Italian in style, with paprika and black pepper, but we think it's pretty amazing and we thank the thief for his good fortune!
Cacciatore is a smaller, dry-cured salami with coarsely cut pork that's ideal for snacking on straight from the chopping board. Many of our customers consider this to be our signature product and it's the closest to a 'home-style' salami as you'll likely find anywhere.
