Pork Salami with Sichuan Pepper
Now here's something a bit different: free-range pork salami with 'Sichuan Pepper' (which is actually the dried seed husks of the prickly ash tree).
Whilst the famous mouth-numbing properties of the Sichuan don't last through the curing process, what remains is a uniquely zesty 'citrus pepper' twist that leaves your taste buds puzzled but wanting more.
This recipe was such a surprise hit that we couldn't resist including it in our new Piccolo range - we hope you agree with our choice!
